The stir-fry is Ayurvedic-related and healthy because it incorporates a balanced blend of fresh vegetables, spices, and healthy fats, all of which align with Ayurvedic principles of nourishment and dosha balance. The use of spices like cumin, mustard seeds, turmeric, and coriander not only adds flavor but also enhances digestion, boosts metabolism, and has anti-inflammatory properties. Ingredients:

• 1 cup mixed vegetables (carrots, bell peppers, zucchini, broccoli, etc.)

• 1 tablespoon ghee or coconut oil

• 1 teaspoon cumin seeds

• 1 teaspoon mustard seeds

• 1/2 teaspoon turmeric powder

• 1/2 teaspoon ground coriander

• 1/2 teaspoon ground cumin

• 1/2 teaspoon fennel seeds

• Salt to taste

• Fresh cilantro for garnish

Instructions:

1. Heat the ghee or oil in a large pan over medium heat.

2. Add cumin seeds, mustard seeds, and fennel seeds, letting them splutter.

3. Add turmeric, coriander, and cumin powder. Sauté briefly.

4. Add the mixed vegetables and stir to coat them in the spices.

5. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

6. Season with salt and garnish with fresh cilantro. Serve as a side dish or over rice.
